Preheat oven to 400°F.
- Slice Butterball boneless turkey breast into 8-10 even tenders.
- Place plantain chips into a food processor and pulse to form very fine crumbs. Transfer the plantain crumbs to a mixing bowl and combine evenly with the sesame seeds.
- In two separate bowls, place the flour and eggs (with a splash of water). Dip each tender into the flour, followed by the egg and finally into the plantain sesame mixture to coat. Place each coated turkey tender onto a lined baking sheet.
- Bake for 20 minutes, or until crispy and the internal temperature reaches 165˚F/74˚C.
- While the tenders bake, mix the honey, vinegar, paprika, cayenne, garlic powder, and parsley together in bowl. Serve the crispy tenders with the hot honey on the side and enjoy!
