Melt butter over medium heat. Add flour and cook briefly until incorporated. Slowly add milk and whisk, ensuring to mix evenly and remove all lumps from the roux.
- Cook for 2 minutes until slightly thickened. Add salt, chili, and cheese and stir off heat until incorporated. Keep warm to keep a nice, viscous consistency.
- Create 4 - 5 slits in turkey franks, ensuring not to cut all the way through. Grill on medium heat directly on BBQ until darkened, heated through and nicely coloured.
- Slice buns in half and quickly grill until slightly toasted.
- Place franks in buns. Top with desired drizzle of cheese sauce. Add peppers, green onion, and even amount of crispy bacon. Enjoy!
