Herb and Honey Roasted Turkey Sandwich

Ingredients

1 Butterball Bone-in Turkey Breast (or Boneless Turkey Breast)2 tsp Dijon mustard2 tsp honey1 tsp oregano1 tsp thyme1 tsp garlic powder3 Tbsp olive oil2 tsp red wine vinegar8 slices wholegrain bread1 head bibb lettuce, picked2 tomatoes, sliced4 slices cheddar cheese1/3 cup mayo2 avocados, sliced

Directions

  1. Preheat oven to 375°F/190°C.

  2. Combine mustard, honey, oregano, thyme, garlic powder, olive oil, and vinegar in a bowl. Whisk well to combine. Using a pastry brush, apply all over the turkey breast, then transfer to oven.
  3. Roast for 45-50 minutes or until the internal temperature reaches 165°F/74°C.
  4. Rest turkey for at least 15 minutes, then carve into thin slices for the sandwiches.
  5. Build sandwiches by spreading mayo on a slice of bread, then adding lettuce, tomato, and avocado. Top with turkey slices, followed by cheese and a top piece of bread that’s covered in more mayo.
  6. Slice and pack for back-to-school lunches!
