Preheat oven to 375°F/190°C.
- Combine mustard, honey, oregano, thyme, garlic powder, olive oil, and vinegar in a bowl. Whisk well to combine. Using a pastry brush, apply all over the turkey breast, then transfer to oven.
- Roast for 45-50 minutes or until the internal temperature reaches 165°F/74°C.
- Rest turkey for at least 15 minutes, then carve into thin slices for the sandwiches.
- Build sandwiches by spreading mayo on a slice of bread, then adding lettuce, tomato, and avocado. Top with turkey slices, followed by cheese and a top piece of bread that’s covered in more mayo.
- Slice and pack for back-to-school lunches!
