Banh Mi Turkey Sandwich

Ingredients

2 Butterball Easy Fresh boneless skinless turkey breasts or leftover turkey, cut into 1-inch thick strips¼ cup water¼ cup white sugar½ cup rice vinegar½ cup carrots, cut into ribbons½ cup red onion, sliced thing½ cup daikon, matchstick2 small cucumbers, sliced thin10- 12 Cilantro leaves4 Tbsp. jalapeño mayo4 Demi baguettes

Directions

  1. To pickle the vegetables, add water, rice vinegar and sugar to a small pot. Bring to a boil. Stir until sugar has dissolved. Remove from heat once brought to a rolling boil, pour over the onion, carrot and daikon. Let sit for 30 minutes.

  2. Assemble by cutting baguettes in half lengthwise. Spread a layer of jalapeno mayo on both the top and bottom bun. Place 1-2 cups of leftover turkey, cucumber slices, pickled vegetable mixture and cilantro. Top with the other half of the baguette and cut in half to serve.
