Start by portioning turkey breast. Cut off skinny end of the breast (into a piece that's about 4 inches long), then cut the remaining thicker portion horizontally to create 3 even portions. Repeat again with second turkey breast. Whisk eggs. Then, place cereal in a large plastic bag and crush until nice and fine. Set up a standard breading station, with three bowls: one with flour, one with egg, then lastly one with crushed cereal.
- Preheat oven to 425°F. Dip each piece of turkey in flour (shaking off any excess). Transfer to egg, then place in bowl with crushed cereal. Coat each piece of turkey evenly, then transfer to a parchment-lined baking sheet. Repeat for each piece, then sprinkle with some olive oil and a dash of salt. Place in oven for 25 minutes, or until the internal temperature reaches 165°F and the exterior is golden and crispy.
While turkey bakes, make your slaw. Finely slice cabbage, onion, and chili pepper. Place in a bowl, then mix with yogurt, lemon juice, olive oil, and salt and pepper to taste. Set aside.
- When turkey is done, place in your bun, then top with healthy and creamy slaw. Add a dash of hot sauce and enjoy!
