Juice 2 limes. Combine lime juice with maple syrup, oil, salt, pepper, garlic, lemongrass, half the green onions and half the cilantro with a hand blender or food processor.
- Cut remaining green onions into slices, and reserve with remaining cilantro and lime wedge.
Cut turkey breast into 2-inch cubes. Place turkey in a covered bowl or container using only half the marinade. Cover and refrigerate the other half. Refrigerate turkey marinade for minimum 2 hours, and for as long as overnight.
- Preheat BBQ to medium heat.
- Grill turkey breast on each side for 8 minutes. Once flipped, baste with 1/2 the remaining marinade. Cook turkey breast until internal temperature reaches 165˚F/74˚C.
- Remove turkey breast from grill and add to a bowl. Toss in remaining marinade, and garnish with the reserved lime wedges, sliced green onions and cilantro sprigs. Serve immediately with rice or salad.
