Leftover Butterball Fried Rice

Serves 2 People

Ingredients

2 cups leftover Butterball Boneless Turkey Roast3 Tbsp. canola oil2 cups brown rice, cooked and cooled1 carrot, diced1 bunch scallions, sliced1 red pepper, diced1/2 cup peas2 Tbsp. soy sauce2 Tbsp. hoisin sauce2 tsp. sriracha2 eggs, scrambled

Garnish:

1/4 bunch cilantro, finely choppedlimes, for squeezing

Directions

  1. In a large skillet, heat the oil over medium-high.

  2. When hot, add rice and cook for 2-3 minutes until the edges are golden brown.
  3. Add carrots, scallions, peppers, peas, and turkey. Cook for another 2-3 minutes, mixing well.
  4. Add the soy sauce, hoisin, and sriracha and mix well.
  5. Add eggs and cook for a minute or two, allowing them to scramble and incorporate into your fried rice.
  6. Garnish with fresh cilantro, extra hot sauce, and some limes for squeezing!
