Air Fryer Turkey Nuggets

Ingredients

Nugget:

1 Butterball Turkey Breast1/4 cup coconut milk1 Tbsp. olive oil2 eggs1 Tbsp. apple cider vinegar2 cups gluten-free panko breadcrumbs2 tsp salt1 tsp paprika1/4 tsp black pepper1 tsp garlic powder1 tsp onion powderGreen onion (for garnishing)

Sauce:

1/2 cup mayonnaise1 small garlic clove crushed1 ½ Tbsp. dijon mustard1 Tbsp. lemon juice1 pinch paprika1/4 tsp salt1 pinch fresh ground pepper

Directions

  1. Cut Butterball Turkey Breast into bite-sized chunks.

  2. Add panko breadcrumbs to a food processor and pulse until fine.
  3. Spread breadcrumbs into a single layer on the baking sheet, add olive oil and bake for 10 minutes until golden brown (350ºC/660ºF).
  4. Combine all the dry ingredients in one bowl (baked panko, salt, paprika, black pepper, garlic powder, onion powder).
  5. In a separate bowl, whisk eggs, coconut milk and apple cider.
  6. Coat Turkey breast chunks first in the egg and then in the dry mix.
  7. Air fry your turkey nuggets for 15 minutes at 205ºC/400ºF, until golden brown and crisp.
  8. For the sauce, simply mix all ingredients together in a small bowl.
  9. Serve nuggets with the sauce and garnish with green onion.
