Butterball Turkey Bacon Jalapeno Poppers

Ingredients

1 package Butterball Turkey Bacon, diced1 ½ cup cream cheese, softened1/2 cup cheddar cheese, grated1/3 cup parmesan cheese, grated1/3 cup provolone cheese, finely chopped2 cups panko breadcrumbs1 cup cheddar crackers, finely ground1 1/2 cups flour2 eggs, scrambled9 jalapenos, halved and de-seeded

Directions

  1. Preheat oven to 425 °F.

  2. In a hot pan, cook Butterball turkey bacon over medium high heat until crispy and golden - about 5-6 minutes. Set aside to cool.
  3. Combine cream cheese, cheddar, parmesan, provolone, and crispy turkey bacon in a large mixing bowl. Mix well and set aside.
  4. Gather three separate bowls. In the first bowl, combine panko breadcrumbs and cracker crumbs. In the second bowl, add flour. In the third bowl, add whisked eggs with a splash of water.
  5. Dip each halved jalapeno in the flour, then egg, then breadcrumb mixture. Transfer to a lined baking sheet. Repeat until each half is coated.
  6. Fill each coated jalapeno half with about a tablespoon of cream cheese filling. Repeat process until all the mixture has been used. Bake in oven for 15 minutes.
  7. Serve with a side of ranch for dipping. Enjoy!
