Maple and Miso Turkey Roast

Ingredients

Turkey

1 Butterball boneless turkey breast roast1 Tbsp olive oil

Maple and Miso Marinade

2 Tbsp maple syrup2 Tbsp white miso2 Tbsp olive oil1 Tbsp rice vinegar1 tsp fresh ginger, finely choppedPepper

Vegetables

1 red onion, quartered2 cups baby potatoes, halved½ cauliflower, cut into florets6 Nantes carrots, halved lengthwise

Directions

  1. Preheat oven to 325°F. Place frozen turkey roast on a roasting rack and brush with oil, without removing the net. Place in oven and cook for 3 hours.

  2. Mix marinade seasoning ingredients and chop vegetables.
  3. After 3 hours, remove turkey from the oven and brush with half the seasoning. Return to the oven for an additional 30 minutes or until the roast reaches an internal temperature of 165°F/74°C.
  4. Mix the rest of the seasoning with vegetables, spread on a baking sheet covered with parchment paper and place in oven for 45 minutes.
  5. Remove roast from oven and let rest for 15 minutes. Cut roast into slices and serve with the vegetables. Enjoy!
