Directions
Preheat oven to 325⁰F.
Position turkey breast-side up on a wire rack inside a 3” roasting pan. Remove neck and giblets from turkey cavity.
In a bowl, mix all fresh herbs, oregano, butter and maple syrup.
Season the cavity of the turkey with salt and pepper, then stuff with onion, lemon and assorted herbs.
Rub herb butter all over the outside of the turkey and under the skin of the breasts, then season to taste with salt and pepper.
Place turkey in the oven and let it cook for about 6 hours (for a 6kg/13lb turkey). Use Butterball Turkey Calculator to determine cook time for the size of your turkey.
With half an hour remaining, check temperature using a meat thermometer in the thickest part of thigh, away from the bone. The thermometer should register 180°F (82°C) and the breast temperature should be 165°F (74°C).
Let the turkey rest for at least 15 minutes before serving.
