Sheet-Pan Greek Turkey Breast

Ingredients

1 Butterball Easy Fresh Boneless Turkey Breast, cut into 1 1/2 pieces2 red onions, cut into quarters4 yellow flesh potatoes, cut into 1 pieces1 pint cherry tomatoes3 Tbsp olive oil2 tsp oregano1 cup sliced Kalamata olives1 cup feta, crumbledLemons for squeezing1 bunch fresh parsley, for garnish

Directions

  1. Preheat oven to 400˚F.

  2. In a mixing bowl, coat red onions, potatoes, and tomatoes in half of the oil and oregano, and transfer to a sheet pan.
  3. Add uncooked turkey to the bowl and coat in the remaining oil and oregano, and transfer to the sheet pan.
  4. Place sheets pan in oven, and roast for 25-30 minutes, or until the internal temperature of the turkey breast reaches 165˚F/74˚C degrees, and potatoes are cooked through.
  5. Remove pan and sprinkle with olives and feta
  6. Garnish with squeezes of lemon and some fresh parsley. Enjoy!
