Directions
In a large bowl, whisk together the mustard, honey, lemon juice, and olive oil. Season with salt and pepper to taste. Set aside.
- Preheat greased grill to medium high. Add the Butterball Turkey Bacon and grill for 2-3 minutes per side, or until crispy and golden. Remove from the grill and coarsely chop.
- Add the grilled potatoes and Turkey bacon to the bowl with the dressing, add spinach, corn, and scallion. Toss in the dressing, then transfer to your serving platter.
- Top with some of the freshly grated cheese and enjoy!
