VEGETABLE FRITTATA, FETA & TURKEY BACON

6 to 8 slices of Butterball turkey bacon12 eggs3/4 cup 15% cooking cream *1 orange, yellow or red pepper, cut into cubes1 cup spinach1/2 zucchini, sliced ​​into half rings1/2 cup fresh parsley1/4 cup feta, or to tasteSalt and pepper, to taste

Directions

  1. Preheat bbq to 400 ° F.

  2. In a bowl, combine eggs and cooking cream. Set aside.
  3. In a barbecue pan, brown the bacon. Add peppers, spinach, zucchini and cook for 10 minutes.
  4. Arrange vegetables nicely. Pour the egg mixture on top. Add parsley. Cook for 20-25 minutes. Halfway through cooking, add half the feta and turn off heat to prevent the bottom from overcooking.
  5. Serve with rest of the feta and a fresh salad.
